As you are looking forward into WOTLK - you may have noticed that gathering professions have got bonus abilities to "match" some of the BOP patterns and items by the crafting professions.  I found the following information on the lvl 80 benefits of each profession so that people can modify if they wish.

Since people are confused what bonuses their professions give here they are:

I. Gathering Professions:

(1.) Skinning

Master of Anatomy - 25 Critical strike rating

Note: Not sure how much of a % bonus this is at a level 80.

(2.) Mining

Toughness - 500 hp

Note: Originally it used to be a Stamina bonus, but Blizzard likes to take nice things away from people.

(3.) Herbalism

Lifeblood - Heals 2000 hp over 5 seconds, 3 minute cool down.

Note: Lifeblood creates a garden around you also. This is sort of a bad thing in PvP because if you're stealthed other players will know where you are. Lifeblood also does not scale with AP or anything like Gift of Naaru.

New Plant bonuses (you have to eat the plants):

Fire Leaf]: Reduces your armor by 100%, but increases your attack power by 400 for 10 sec, 1 Min cooldown

Fire Seed: Makes you vulnerable to magic, but increases your spell power by 200 for 10 sec, 1 Min cooldown

Note: Eating these plants while soloing is suicide depending on what monster you fight. Also using these plants in an Arena match or generally most PvP is also suicide considering 0 armor or magic vulnerability is asking to be killed real quick.

II. Production Professions:

(1.) Engineering-

To sum up the bonuses for Engineering basically you can make more gadgets and more goggles , etc. Unfortunately Blizzard decided to screw your profession over so the only gadget worth noting is one that allows you to see players without clothing... so have fun looking at Blood elf / Night elf girls.

(2.) Alchemy-

Mixology - Gives a bonus to your potions and elixirs by a %.

Infinite Potion- You can make a potion that heals you for 2000 mana every 2 (maybe 3) minutes and 600 health.

Note: There's a Potion debuff, but I'm not sure if that infinite potion is effected by it.

Blue Trinkets (Currently I don't know the stats for the Purple Trinkets / Epic):

Indestructible Alchemist's Stone
Binds when picked up
Unique
Trinket
+75 Stamina
Requires Level 75
Requires Alchemy (400)
Equip: Increases your dodge rating by 50 (1.88% @ L75).
Equip: Increases the effect that healing and mana potions have on the wearer by 40%. This effect does not stack.

Mercurial Alchemist Stone
Binds when picked up
Unique
Trinket
Requires Level 75
Requires Alchemy (400)
Equip: Improves haste rating by 50 (2.26% @ L75).
Equip: Increases spell power by 59.
Equip: Increases the effect that healing and mana potions have on the wearer by 40%. This effect does not stack.

Mighty Alchemist's Stone
Binds when picked up
Unique
Trinket
Requires Level 75
Requires Alchemy (400)
Equip: Improves critical strike rating by 50 (1.61% @ L75).
Equip: Increases attack power by 100.
Equip: Increases the effect that healing and mana potions have on the wearer by 40%. This effect does not stack.

(3.) Blacksmithing

Socket Bracer
5 sec cast
Requires Cloth, Leather, Mail, PlateTools:
Blacksmith Hammer
Reagents:
Saronite Bar (4), Eternal Earth
Permanently add a socket to your bracers. Requires a level 60 or higher item.

Cannot add more than one socket to an item. Can only add a socket to your own armor, and adding a socket binds the item to you. The added socket requires that you maintain 400 blacksmithing or it will become inactive.

Socket Gloves
5 sec cast
Requires Cloth, Leather, Mail, PlateTools:
Blacksmith Hammer
Reagents:
Saronite Bar (4), Eternal Shadow
Permanently add a socket to your gloves. Requires a level 60 or higher item.

Cannot add more than one socket to an item. Can only add a socket to your own armor, and adding a socket binds the item to you. The added socket requires that you maintain 400 blacksmithing or it will become inactive.

(4.) Enchanting-

Enchant Ring - Assault
5 sec cast
Tools:
Runed Cobalt Rod
Reagents:
Infinite Dust ( 8 ), Greater Cosmic Essence
Permanently enchant a ring to increase attack power by 32. Only the Enchanter's rings can be enchanted, and enchanting a ring will cause it to become soulbound.

Enchant Ring - Greater Spellpower
5 sec cast
Tools:
Runed Cobalt Rod
Reagents:
Infinite Dust ( 8 ), Greater Cosmic Essence
Permanently enchant a ring to increase spell power by 19. Only the Enchanter's rings can be enchanted, and enchanting a ring will cause it to become soulbound.

Enchant Ring - Stamina
5 sec cast
Tools:
Runed Cobalt Rod
Reagents:
Infinite Dust ( 8 ), Greater Cosmic Essence
Permanently enchant a ring to increase Stamina by 24. Only the Enchanter's rings can be enchanted, and enchanting a ring will cause it to become soulbound.

(5.) Leatherworking

Note: All bracer enchants become SOULBOUND to you so this is not a profit maker, just a way to make yourself actually own more aka your Profession bonuses.

Permanently enchant bracers to increase your Arcane resistance by 60.

Fur Lining - Shadow Resist

(6.) Tailoring

Darkglow Embroidery
4 sec cast
Requires Cloth, Leather, Mail, PlateReagents:
Ebonweave, Eternium Thread
Embroiders a magical pattern into your cloak, giving you a chance to restore 300 mana when you cast a spell.

Lightweave Embroidery
4 sec cast
Requires Cloth, Leather, Mail, PlateReagents:
Moonshroud, Eternium Thread
Embroiders a subtle pattern of light into your cloak, giving you a chance to cause an additional 1000 to 1200 Holy damage when you damage an enemy with a spell.

Swordguard Embroidery
4 sec cast
Requires Cloth, Leather, Mail, PlateReagents:
Spellweave, Eternium Thread
Embroiders a magical pattern into your cloak, causing your damaging melee attacks to sometimes increase your attack power by 300 for 15 sec.

Magnificent Flying Carpet
Binds when picked up
Requires Level 70
Requires Tailoring (425)
Requires Artisan Riding
Use: Teaches you how to summon this rug. Can only be summoned in Outland or Northrend. This is a very fast rug.

(7.) Jewelcrafting

There are 18 EPIC gems that are Jewelcrafter only and they own every other gem in the game by 25% or more. Therefore the best combo with this profession is probably Blacksmithing.

You are however limited to only 3 gems, but thankfully with blacksmithing you can socket yourself 3 times (B.S. gets a belt socket also, but unlike the other two sockets it's not soulbound and can be sold to other players)

Equip: Increases attack power by 84.
Use: Summons a Phantom Boar to fight for you for 30 seconds. (5 Min Cooldown)

(8.) Inscription

Master's Inscription of the Storm

Requires Miscellaneous, Cloth, Leather, Mail, PlateReagents:
Snowfall Ink
Permanently adds 61 spell power and 15 critical strike rating to shoulder armor.

Master's Inscription of the Pinnacle
4 sec cast
Requires Miscellaneous, Cloth, Leather, Mail, PlateReagents:
Snowfall Ink
Permanently adds 52 dodge rating and 15 defense rating to shoulder armor.

Master's Inscription of the Crag
4 sec cast
Requires Miscellaneous, Cloth, Leather, Mail, PlateReagents:
Snowfall Ink
Permanently adds 61 spell power and 6 mana every 5 sec to shoulder armor.

Master's Inscription of the Axe
4 sec cast
Requires Miscellaneous, Cloth, Leather, Mail, PlateReagents:
Snowfall Ink
Permanently adds 104 attack power and 15 critical strike rating to shoulder armor.

Now that you know all the bonuses than as you can see it benefits every class for any profession you pick. Unfortunately the Gathering profession bonuses either were nerfed or purposely made extremely Inferior compared to the other professions.
